[Hiyashi Age-Nasu no Onioroshi Soba (Chilled Deep-Fried Eggplant with Grated Daikon Soba)]

The fried eggplant has a vibrant color, a fragrant aroma, and a melt-in-your-mouth texture. It's delicious whether eaten simply with soy sauce and condiments or marinated in a Japanese-style soy-based sauce.

Eggplant is in season from early summer in May to autumn in October, and it's a great ingredient to actively incorporate into your diet during the hot summer months due to its cooling properties from within. The purple skin of the eggplant contains a type of polyphenol called "nasunin," which is known for its antioxidant properties and is believed to be effective in preventing lifestyle-related diseases.

For today's lunch, I made "hiyashi age-nasu no onioroshi soba" using fried eggplant and grated daikon radish. I added the slightly concentrated noodle sauce to the freshly fried eggplant to infuse the flavors, while boiling the soba noodles in the meantime. I grated the daikon radish for the onioroshi (grated daikon radish) topping and served the cooked soba noodles on a dish after rinsing them with cold water. I made the noodle sauce with fried eggplant cold by adding ice and poured it over the soba noodles. Finally, I topped it with the grated daikon radish and your preferred condiments. This recipe can also be applied to udon or somen noodles.

When adding the onioroshi to the soba, I recommend using the Yoshita Handi-Design Studio's Renge Spoon. It allows you to scoop a generous amount of coarsely grated onioroshi all at once.
