["Oni-Kyuri," Grated Cucumber with Onioroshi]

Onioroshi is commonly used for grating daikon radishes, but it can also be conveniently used for vegetables and fruits other than daikon radishes. "Oni-kyuri," as the name suggests, is made by grating cucumbers (kyuri) with Onioroshi, which is easier and less time-consuming than chopping them. The irregular, uneven cross-section allows the seasonings and flavor to blend easily, and the crisp, raw texture of cucumbers can be enjoyed.

Cucumbers are low in calories, but contain high levels of potassium, magnesium, and vitamin C. They are said to help prevent swelling and beautify the skin.

If you are in the mood for a light lunch, how about somen noodles with oni-kyuri and tomatoes? Adding olive oil and black pepper to men-tsuyu (Japanese noodle soup) gives the somen a slightly different salad flavor. Please try it this time of year when summer vegetables are delicious.
