[Dried Persimmons, a Japanese Preserved Food]

There are many preserved foods in Japan, and dried persimmons are one of them. The existence of dried persimmons was first confirmed in literature in the mid-Heian period. Dried persimmons appeared as a confectionery for festivals in the "Engishiki," which describes the national system of the time.

There is an anecdote that during the Sengoku period, Nobunaga Oda gave Luis Frois, a missionary from Portugal, dried persimmons as a specialty of his territory. Since persimmons are an endemic species native to East Asia, and persimmons were introduced to Europe from Japan in 1789, Frois probably did not know about dried persimmons, and thought of them as a type of dried fig.

In the old days, the method of drying persimmons by drying the whole branch in the sun was changed to skewering persimmons on skewers, and after the Meiji era, it became common to hang persimmons by tying the shaft with a string. Dried persimmons are sweetened by removing the astringency from the dried persimmons, and the many vitamins and rich dietary fiber contained in the persimmons are expected to prevent hangovers and improve bowel control.

This year, we hung the astringent persimmons sent from our parents' house under the eaves and made homemade dried persimmons. When the water on the surface is well drained, we will open them with a knife and make them into rolled persimmons wrapped with butter and walnuts to enjoy the homemade taste.

[Christmas Sweets, Stollen]

Stollen is a traditional German pastry that is eaten during the Christmas season. In Japan, as Christmas approaches, you will see more and more of them in bakeries and pastry stores.

In Germany, the four weeks before Christmas is called Advent, and it is a particularly important and joyful period of the year for the German people. Stollen is eaten little by little with family and friends over the four weeks of Advent.

A typical stollen has dried fruits, nuts and rum kneaded into the dough, and when it is baked, it is dipped in butter and finally coated with powdered sugar to make it pure white. Because of its appearance, it is said to resemble the infant Jesus Christ wrapped in a white wrapping.

One of the appealing aspects of this product is that it matures and becomes more flavorful as time goes by.

[Rikucho Ogasawara's Frying Pan - Three Functions in One]

This frying pan is one size larger than the long-time popular "Mini Pan." Like the Mini Pan, it is a masterpiece left behind by cast iron artist Rikucho Ogasawara.

A small frying pan that can conveniently do three things: bake, fry, and simmer, making it the perfect size for one or two people. It's great for baking dumplings, frying a small amount of fried food, and even for stewing, which is a great winter dish.

We used mackerel, which is in season right now, to make a classic Japanese dish, "simmered mackerel with miso." The broth boiled down in a frying pan goes well with the fluffy mackerel and makes for a great white rice dish.
